“When I power on the TV I have to choose the HDMI input in order to switch to Xfinity cable. Is there a way to set it up so that as soon as the TV is turned on it defaults directly to Cable TV? (Creates difficulty for disabled family member.)”

Go to Settings - System - Power - Power on (Home Screen) . then change it to what you want the power on option to be in your case the hdmi for the cable input. That should make it start on the cable input, I don't have cable hooked up to mine so I can't test the theory.

To set your HDMI input as default please Go to the home screen, then select system, you will see the option power, please select it, there on the "power on" option please select the input where you are connecting the cable box. As you suggested, going to settings > power > power on - allowed me to change the settings so that the TV will now default to power on to whatever the last source watched was, which works great, as long as the last thing you watched was the cable source. (Tremendous help! Will make it much easier for our disabled family member - appreciate the reply very much!)
