To answer your question Ran, 1. No, you will not be able to control the speaker volume independent of each speaker. 2. You can plug all the 5, or the front 3, or just the center. Sub-woofer is optional.

In the setup you can increase or decrease each speaker separately, but it takes some time to do it because you can't listen to the sound when you do it, so you set the sound, listen to something, then re-adjust, if necessary. 2. It is not necessary to plug in all the speakers, as far as I can tell.
