As long as your iPad Air 2 is running the latest iPadOS yes you would be able to do so keep in mind if you’re running an outdated OS and you’re apps have not been updated by their developers they will not be carried over or they will but they will no longer work

Yes, you can backup your iPad air2 in the iTunes and recover back on the UNV iPad pro 12.9
