It’s going to depend on whether or not you had iCloud turned on and/or if you did regular backups either to iCloud or your computer. If you took backup precautions, you’ll probably be able to restore from said backups. As far as the email, you should be able to access any email from a browser as long as you can remember the password. Hope this helps. Good luck
