“if I bought the phone, would I have to either, go to the Apple Store and pick it up, go to Best Buy and pick it up, or have it shipped to me?”

I had mine shipped. It's from Best Buy so if they have it in store you can choose to pick it up. Otherwise you will need to have it shipped. I will be taking it to my carrier to buy a simcard and activate it.
