When I had the 2021 G15 Zephyrus model it came with 8 GB of memory soldered to the motherboard and I added 32 GB of RAM in the only open DIMM slot. Never had any issues. There is a performance benefit to dual channel, but I don't think it will be a deal breaker. I will say with 4800 MHz DDR 5 cost coming down I was able to buy 2 x 32 GB for around $174.00 on Amazon.
