“I would like to use this pot to cook some beans and dates for Chinese medicine for a certain temperature for 30 minutes. Can this be done? Will it shut off after the “cooking”?”

Not advisable, this is designed specifically for tea. The only real consequence would be difficulty in cleaning the kettle as it is not submersible. So you could, However a conventional pot or pan would be preferable.
