Ask your contractor. I suspect that if he's creative enough he can engineer a venting system which pulls from the back (back splash) edge of the cook top, perhaps 3 - 4inches high and running the width of this cook top. Locate an existing grille/cover and build around that. Putting it to either side probably doesn't work because of debris that would fall down while cooking. We're replacing a JennAir cook top that had the center based exhaust system so the burners were placed either side of the venting system, point being it was out of the work area. Good luck!
