Convection circulates heat generated inside the oven via a fan for a more even heat distribution. Conventional will be heated directly from the heat source with no circulation. Convection is meant to cook more evenly and faster.

Please try again later.A convection oven has a fan, or fans, that will circulate the hot air inside the oven providing for a more even and consistent temperature during the cooking cycle. In theory, it will help prevent lopsided cakes and should also help with the food’s interior temperature. In some cases, it will also reduce the overall cooking time by a few minutes.
