Hi Fred- We are excited to hear of your interest in our GE Café™ Series! Model C2S995SELSS features a Traditional Upper Oven and Convection Lower Oven. You can certainly choose the "Bake (traditional)" option in both ovens and cook the same recipe with same results. The Convection Bake mode (lower oven) is intended for baking on multiple racks at the same time. This mode uses air movement from the convection fan to enhance cooking evenness.
