Max memory speed is achieved by using all 8 slots and maxing them out with 8GB each. Motherboard chipsets use memory channels now a days and when the proper number of slots are filled per memory channel it access each channel as if it is a single memory stick. So you always want to match memory and fill the memory slots by the channel numbers indicated on the board, I.e. Memory Slots 0, 1, 2, 3, each are 2 slots and make up 8 sticks using 2 channel memory. If you are familiar with Raid for disk drives it would be like Raid 0 where 2 disk drives are seen as 1 big disk by the operating system and it is almost twice as fast reading and writing to the the single virtual disk drive because it really splits everything in two and reads and writes to both drives at the same time.
