Great question Cynk! There are few differences between the two. While a DVR typically uses analog cable for video transmission, an NVR will typically use CAT5e Ethernet cable for a cable cable. NVR cameras also typically have their own address on the network allowing them to be accessed individually when connected to the network. Both will record to an internal hard drive in most cases.
