“Once the SD Card is full, does new content get recorded over the oldest or will nothing new be recorded until it is manually deleted?”

With the Defender Guard IP camera, you can set it to either automatically overwrite the oldest footage once the SD card is full, or you can set it to stop recording until you cleared the footage from the SD card.
