I'm pretty sure that that statement is just meant to project that there is only one HDMI 2.1 input on the reciever, the remaining inputs are all only HDMI 2.0 and therefore can't pass through more than 4k@60, the one HDMI 2.1 input should pass through 4k/120 or 8k from anything plugged into it, assuming they also support HDMI 2.1 and you have HDMI 2.1 cables from both your source equipment and from the receiver to the TV.
