• As far as fitting into gimbal both s8 and s8+ work great. Osmo mobile has a file to tighten on the back so you never feel like your phone may get loose and fall. Only draw back is that depending on your phone's protective case, you may have to remove it so it fits perfectly.

• I have an iPhone 7+ and it works fine with that. I would think that you would be good with your S8+

• i use my Samsung S8 Plus with the DJi Osmo Mobile with no problems it works great, I even use it with the universal mount and straight extension arm to mount the Rode video micro phone with it
