1) The exterior does not get as hit as you'd expect from an 1800 watt oven. However, if you cook anything over 350 degrees for more than one hour, all the knobs and the door handle are extremely hot, even wearing heavy silicone hand mitts. I won't use this again unless I'm wearing mitts. Cool down is quite fast maybe about 5 minutes. 2) Yes, you can bake bread and proof. No specific instructions and I just searched for bread recipes online. Bread comes out very moist.

The air exhaust is at the top center of the back of the unit, but there are vents on all sides except the front, I presume for air input. After cooking is complete the exhaust fan continues to run for a few minutes until the unit has cooled a bit. I have a vent house sucking the exhaust out a window fan because the kitchen gets really hot otherwise.
