“Will the ink dry up over time if I don't print that much? E.g., over a year or two should I expect that the ink will dry up?”

When the printer is powered off the print head is parked in a protected holder which makes it harder to dry out. I have seen printers work after a month's vacation with no problems. As for a year I would expect a problem. However, depending on storage conditions it just might still work!
