“How would I hook this up to my surround sound system if no HDMI on the receiver? I do have an optical on the receiver. Would this work?”

You can send HDMI to the projector and the sound through your SPDIF/TOS Link to your receiver, just be aware both of those formats only allow 5.1 surround sound and are not compatible with newer standards such as HD DTS and Dolby True HD/Atmos
