No the wires dont come out, you cant add new wires or remove existing wires in this PSU.

This particular unit is non-modular, so sadly no. All the cables you would need for a regular gaming PC are still present here, 24pin power, 8pin cpu power, etc. But if changing the cables is for aesthetic purposes. im sure you can find cable extensions that look better than these. You would attach them to then ends of your non-modular cables and route them regularly.
