Yes, a designated counter mount faucet just for drinking or cooking would be great. This will extend the life of the filter and save you money replacing the filter. This is a great idea because most likely you don't need filtered water for washing dishes. Depending on the faucet tubing, you may need to get a different connector. The push/quick-connect fitting are the easiest for plastic tubing.

I would suggest a valve that attaches to the existing one. If you replace the existing valve it is more involved you will need to turn off the home water supply, unscrew or desolder the old valve and put a new one on.

The out of the filter goes to you separate faucet. You will have to purchase the splitter separately, there are several types just make sure the one you choose does not restrict flow in any way.
