As long as smartwatch will do gsm it will work.

Second, the Apple Watch requires you have service using the same carrier as your cell phone regardless of your carrier. Third, Freedompop uses cellular data for voice and text USING IT’S OWN APP. Without their app on a device, you get no service. Fourth and finally, their data-only SIM is exclusively for mobile hot-spot devices, which the Apple Watch is most definitely not. There is (as far as I know) literally no way to do what you intended, as there are multiple reasons for failure.
