Hello Jill! The flame on the range can be adjusted to allow for a simmer. The knobs on this unit are cast metal and are heat resistant. It is recommended that the grates are hand-washed and towel dried to preserve the coating on them. Yes, this unit is finder-print resistant. -Kiara
