“The height of this unit on Best Buy's site says it is only 35 and seven eighths inches tall from the bottom to the top of the control panel display. This seems incredibly short. Is this correct or a misprint?”

Hello, Jackman60. The full height is listed as 48 inches on our manufacturer’s website, however, the height of 35-7/8” may be the height from the cooktop's surface to the floor.
