It has a turbo freeze option that works very quickly - not flash-freeze, but pretty fast. Of course, it depends on what you're freezing and how much. You'll freeze a gallon of water faster than a 7-lb piece of beef, but you'll freeze a single gallon of water faster than 7 gallons. Once it's loaded with items already at freezing, another single item at room temp will freeze very quickly.
