Hello, If you are adding water to your makeshift drip pan to catch oil, we recommend stopping as that could be very dangerous should something catch fire. If you need to clean it, we would recommend using aluminum foil or parchment paper. As to how this would affect cooking, we would not know as this an untested and unapproved method. This would be counterproductive as air fry is meant to make things crispy and steaming something does the opposite. Hope this helps! Mike@GEA
