“Can you use metal sheet pans/baking dishes and also put a cast iron pan in this (depending on size of pan). Not sure if type of cookware matters given the microwave feature. Thanks.”

You can us metal for convention, but not microwave or combined microwave/convection.I was able to google the part# to find the user manual online and it provides details. See attached screenshot form manual on cookware usage.
