“Can you use both ovens at the same time without there being a problem with power surges or either unit possibly stopping working? I’ve seen questions like this for other similar ovens.”

Yes, you can use both ovens without any issues as long as the electrical requirements on pg. 2 of the Installation Instructions are being met.
