“Last question. I’ve set this up with my son’s Xbox One and figured out how to use that skill through Alexa. The projector is on the power strip which just cuts the power on or off. We still have to turn it on. Does using voice for that require a hub?”

Unfortunately it's ht to get Alexa to turn on the projector. It's the same with my tv. Quick Remote is supposed to work with Alexa and actually turn the TV on and off but it doesn't work for me. All it can do is turn the plug off and on.
