I can Chromecast anything from my iPhone to my older Sony tv as long as it is on my phone. But can’t screen mirror anything from the internet such as a ‘how to video’ or an old music video. Does this device give me the capability to do that. null

I use the Google Home app (check the apple store) from my Android devices and have no problem casting my screen to the TV. I Use it often for training videos.

Screen mirroring is natively supported only by Android devices. But you can cast any content of cast-enabled apps on your iOS/Android device with Chromecast. You may find 3rd party apps that may work with Chromecast to mirror the screen of your iOS device.
