“What is involved in mounting this under the kitchen counter next to the sink? Do you need to leave space on the sides or can another cabinet be mounted right next to it? Will vibrations of spin cycle affect the cabinets?”

It does vibrate like all get-out (we have ours in a bathroom abutting my office and several books have fallen off bookshelves), so I'd recommend a "shock absorber" system of some sort--probably with some insulation surrounding the unit or some such thing. Or leaving extra space (not much more than a few inches) would probably negate that situation.
