144Hz is the monitor refresh rate. That is how fast it refreshes, even if you are only sending it 75fps from your game. If you're pushing more than 60fps, then you will benefit from upgrading to a 120/144Hz monitor, as the 120/144Hz monitor will be able to display more frames than your a standard 60Hz one. If your system is running a game at less than 60fps, you won't benefit from the 120/144Hz monitor, as a 60Hz monitor will be able to display just as many frames.
