“Does it do sleep tracking and is it compatible with Samsung Health? I have an S7 Edge and wondering if there are any other watches which play well with Samsung Health.”

I use the Huawei health to track sleep - seems to do pretty well but I don't have a reference. I went to samsung health (I have an S8) but it didn't see my watch as an 'accessory'.
