“Have an iMac 24" on order from APPLE which has been delayed for three months. They seemed to indicate that I needed 2TB SSD storage since I mentioned that I work on pictures, documents, etc. Do I really need 2TB of storage or can I get by on 512GB SSD?”

Speaking transparently you’ll need more than 512GB. Ideas and photos along with the apps that use them will fill up part of your storage very quickly. If you had a 1TB you may be able to maneuver around it. The other option is to get external storage.
