“Noticed after I got this tablet that it can't connect to Wi-Fi 5GHz networks only seems to support 2.4 GHz connections, any idea if when upgraded to android 7 if then it could connect to 5GHz connection? since that seemed to work better for my old tablet”

As per the product manual on Insigna's website the tablet only supports 2.4GHz 802.11bgn. This is a hardware limitation, not software. Insigna did not include a 5GHz radio on the tablet so changing OS versions or software will not address this limitation.
