Yes. The red and white cables are the right and left channel stereo audio signals while the yellow cable is for the video. If your audio source is mono, you need only one of the two audio cables, and you could use either the red or the white one. Leave the other one disconnected at both ends.

If the device with just a white jack is connecting to a stereo playing device, you should probably get a splitter or "Y" with one female end and two male ends. The white from the cable would connect to the female connector on the splitter and then you would connect the male ends to the red and white jacks on the stereo playing device. Doing that will reduce the chance of hum and you would get sound on both the left and right channels.
