Q: One of the things i am trying to connect only needs a white and a yellow cable. Could i just use this and not plug the red one into anything?

A: Yes. The red and white cables are the right and left channel stereo audio signals while the yellow cable is for the video. If your audio source is mono, you need only one of the two audio cables, and you could use either the red or the white one. Leave the other one disconnected at both ends.
