• I run "chicken" cycle to sterile glass jars and mushroom substrate and it does the job. No contamination.

• The USDA does NOT recommend canning with an electric pressure cooker. I do lots of canning of fresh fruits and veggies. I either use the tried and true water bath method or a stove-top pressure canner.
