“I was planning on running my projector just plugged in since it’s still charging and it keeps on showing me the power symbol and shuts off only after a couple minutes. I have my iPhone’s screen to never shut off. What can be causing this?”

I actually have an iPhone to that works just fine on my projector it sounds like the projector is it realizing that you have anything plugged into it for some reason could be the cord To your iPhone mine didn’t work at first either and I had to go to AT&T store and found out it was my phone they had to reboot you may want to try that at the store
