“Where is the bluetooth actually received and transmitted from on these headphones? Do the earpieces actually receive or transit any signal, or does all that happen at the part on the back of the neck? (I want to minimize radiation to the brain)”

The Bluetooth connection is thru the piece where the mic and volume buttons are located. If you use the headphones around the back of the neck it'll be against your head, just below or behind the ears depending on how you had the earbuds.
