Yes the tank is detachable and the tank is plastic; not sure how you would not know that. If you are using bottled water that could be the source of the plastic taste. I have zero issues with the taste as I use bottled water that I drink regularly. There is a huge mart store that I no longer purchase water from due to the plastic taste. Good luck
