“I bought this thinkpad, a usb-c docking station, and have two external monitors connected to the docking station via HDMI cables/ports. In display settings on this chromebook, it does not give the option for Extend displays. Am I missing something?”

Be sure the universal USB-c docking station you are using is compatible with the Chrome Operating System.
