• Yes you can. Turning off the ice maker or disconnecting the water line would not affect cooling of the unit. ^ Jamal

• I also left the water line disconnected. Note that there is a power switch on the ice maker unit inside the freezer that must be turned off. Open the freezer drawer and look inside to the top-left.
