• I have used the griddle that came with. You have to pre-heat it quite a bit as it's cast iron, but once it's hot it will cook about anything, including pancakes and bacon, but hopefully not together. Watch the big oven, mine went out right out of warranty at 13 months.

• The center burner has 8000 BTU which is good for pancakes, but if you'd prefer something else, I'm sure we can find something for you.
