• Yes, you hold the extra rinse button for three seconds until you hear a confirmation beep. Read the instructions. You may do this as many times as you need to get it to the desired level.

• I don't believe you can manually adjust the level. You can add additional rinse cycles but I haven't seen any option to change the water level.
