Yes, it works flawlessly with my Pixelbook and Pixel Slate using either Bluetooth or Unifying Receiver (USB).

The M355 Wireless Optical Mouse should definitely work with a Google Pixelbook yes, as it was designed for Chrome OS, and it's certified to work with Chromebooks. You should have 2 possible connectivity options; with the Unifying Receiver (found inside the mouse right next to the battery), or via Bluetooth. If you want to connect via Bluetooth, make sure you click the round button under the mouse to put it in Bluetooth pairing mode, then go to your Pixelbook Bluetooth settings, and complete the pairing. If it's not pairing, I would try and reset the Bluetooth connection on your Pixelbook, reboot the computer, and try again. For Unifying pairing, simply connect the Unifying Receiver to your Pixelbook, and click the round button under the mouse to put it Unifying pairing mode. That should do it!
