“My monitor is 15 Lbs (without the stand) and is 27", the VESA pattern is 100x100. The manual says to only use mounts that can support up to 60 lbs. Is that just the company being extra cautious or should i use a different mount?”

I would recommend getting a mount that fits all of the requirements set forth by the manufacturer, including that weight limit requirement.
