Instead of two just purchase a larger coverage area like a 2600 or more instead of 1900

For the most part, yes, but Google has an extender solution for multiple extenders called "Google WiFi" (search the SKU number "5706130" on Best Buy's website). If you are going to connect MANY devices, I suggest you use a home router that supports MU-MIMO (not an extender, your actual router first).

You can but the data rate gets cut in have so you will see the WiFi slow down. I'm using two now. in two diffident rooms. 
Get the Netgear ORBI if you want to do it correctly
