“Can I use this system to completely replace the modem/router setup provided by ATT uverse? Do I have to purchase a separate modem too or will this do everything I need? Then if I decide to switch to XFinity, will it work with them as well?”

You probably still need to use the router that they provide but you can plug into the back of it and use this router as the Wi-Fi system. Coverage in a 3000 ft² house is good depending on where you have it spaced out.

Modem is required. The nighthawk connects to the modem. Modem translate between communication protocols used by the broadband service and the local network.
