Both joycons can be used as either one controller or two controllers for co-op. Battery of the joycons varies, but most sources say 20 hours of continuous use, which is superfluous for most sessions. If that wasn't what you were asking, then I'll list off the other ways to play. There's handheld (where the joycons are firmly attached and you hold the switch like you would a handheld) and TV mode (where the switch unit sits in the dock and you play on the TV using the joycons wirelessly. Your joycons will be recharged upon connecting them to the Nintendo Switch System. You need third party accessories to charge the joycons without connecting them to the Nintendo Switch System.
