When I mean "in-editing", I mean is there a way to edit a picture right on the camera after you take it? If so, what is part of the "in-editing"? Also, what color options as in, is there options to take a picture in monochrome, sepia, etc...? Thank you for the help.”

Yes. There is an in-camera editing program. You can quickly change the color balance (make it cooler or warmer) or change the color scheme (black and white, sepia). The in-camera editing program is very useful, and when you edit the picture, the camera saves both copies so you can decide once their on your computer which one you like better.
